gh-copilot: update Copilot metrics endpoints & schemas to latest API #8964
Description
The gh-copilot plugin is partially out of date with GitHub's Copilot REST API (2026-03-10). It pins the right API version but drops several response fields on extract, loses org identity on org metrics, and skips the 28-day reports.
